GDL for meat:

Gluconic acid lactone CAS: 90-80-2: content in more than 99% of the formula is: C6H10O6 molecular weight: 178.14 gluconate - delta lactone, according to the provisions of GB 2760-2760 as a stabilizing agent and curing agent, can according to production need to use in all kinds of food.  

Glucono delta lactone is an ingredient in many foods, functioning as a substitute for enzymes in cheese processing or tofu manufacturing; or as a leavening acid in bakery products.

 

Applications.

Glucono delta lactone(GDL) USP26 FCCIV can be used as protein coagulant, sour agent, leavening agent, preservative.  Usually 1% GDL in aqueous solution pH value of 3.5, therefore it can be used as sour agent, in the process of curing, to accelerate the transformation of nitrite sodium nitrite, to improve color effect, and reduce the use amount of sodium nitrite, the stability and slicing of products are improved, then the product is well formed. It is also a preservative to extend the shelf life of the product due to the inhibiting effect of grape acid lactone on mold and general bacteria. Shorten the mature process of meat products, increase production rate.
